2017 cub cadet challenger gas pedal modification

I am looking at a 2019 750 and same issue. The gas pedal is too high for me. I am considering cutting some length off of the arm and move it back and down then weld it. -
Looking at a 2019 CC 750 with 200 miles on it. Are they descent machines? I want it for my farm.
